Parmesan Orzo with Smoked Salmon

Salmon has been credited with many health promoting benefits.  The omega-3 fatty acids in this fish are credited with helping with inflammation, cognitive function, cancer prevention, eye health and more.  Ingredients: 2 14oz cans of low sodium chicken broth 1.5cups whole wheat orzo 2Tbs olive oil 1 cup thinly sliced leeks (whites only) 1/2lb asparagus cut to 1" pieces 1/2cup shredded parmesan 1/3cup reduced fat sour cream 8oz smoked salmon, coarsely chopped 2Tbs chopped parsley 1/4tsp black pepper Directions Cook orzo in chicken broth according to package directions. Drain & reserve 1cup broth. Return orzo to saucepan & stir in 1Tbs oil. In large skillet heat remaining 1Tbs oil over medium-high heat. Add leaks and saute. Add reserved broth and asparagus, stirring until just tender, about 2min. Remove skillet from heat. Stir in cooked Orzo, 1/4c parmesan, sour cream, parsley and pepper. Sprinkle with remaining parmesan. Place salmon on top.
