Tanya’s Turkey Meatloaf Muffins

Looking to switch it up a little for dinner? Try this healthy twist on conventional meatloaf.  Baking in a muffin pan cuts down bake time and is more fun for the kids.

RECIPE:
Tanya’s Turkey Meatloaf Muffins
Ingredients:
-2lbs of extra lean turkey
-3 egg whites
-1 cup oatmeal
-1/2 t ground cumin
-1/2 t ground thyme
-2 t dried yellow mustard
-2 t black pepper
-2 t red pepper spice
-2 Tbsp garlic powder
-1 small onion (chopped)
 
Preheat oven to 365.  Spray muffin pan w/ pam cooking spray.  Mix all ingredients together in a bowl.  Place in muffin tins.  Bake for 40 minutes.
Makes 12 muffins.
